What say more than just tell you the recipe of these delicious brownie buckeyes that will make your mouth water. They are just the right dessert for the upcoming holidays. For less than an hour, you’ll make a tasty dessert for 12 people if you use the amounts given below.
Brownie Buckeyes Recipe
- 5 ounce fudge brownie mix (one box)
- 1/4 cup of softened butter
- 1/2 block 4 oz. softened cream cheese
- 1 egg
- 1 cup of powdered sugar
- 1 cup of creamy peanut butter
- 4 ounces or 4 blocks of your favorite chocolate (this recipe uses Candiquik)
Preheat oven to 350 F. Beat the brownie mix, cream cheese, butter, and egg in a medium-sized bowl. You should get a sticky dough. Scoop it on an un-greased baking sheet, and make around 24 cookies. Make sure they are well rounded by smoothing the edges of each cookie.
Take another bowl to mix the peanut butter and powdered sugar until well combined. Then, form 1-inch balls from the mixture as many as cookies. Put them aside, and bake the cookie dough in the preheated oven for 12 minutes. Don’t let the cookies overcook, but also don’t let them undercooked.
Gently press a peanut butter ball in the center of each cookie the moment you take the cookies out of the oven. You’ll notice the balls soften slightly, but that’s fine. Let them cool for around five minutes and then move them to a wire rack to allow them cool completely.
Put the chocolate in a microwavable bowl and melt for 45 seconds. Stir a bit and then let it melt until completely melted, which will take around 15 additional seconds. Pour half a tablespoon of the melted chocolate on each cookie, making sure it covers the peanut butter/sugar ball. Once the chocolate sets, your brownie buckeyes are ready to eat. Enjoy!
