Beet Carrot Pomegranate Salad Recipe
Ingredients for the Salad
1 raw, trimmed and peeled beet root
A handful of pomegranate seeds
3 peeled carrots
A handful of shelled walnuts
Ingredients for the Dressing
1/4 cup of fresh orange or tangerine juice
1/4 cup of Greek yogurt
1/4 cup of extra-virgin olive oil
2 tbsp. of apple cider vinegar
Salt and pepper
Dried herbs (rosemary, oregano, thyme…)
Cut the beet and carrot into short, thin strips using a mandoline, julienne peeler, or a sharp knife. Place pomegranate seeds, carrot strips, beet strips, and walnuts in a bowl, without mixing them.
Prepare the salad dressing by mixing all of the dressing ingredients in a mason jar or a small glass bottle, and shake vigorously to emulsify the dressing. Pour the dressing over the salad, mix well, and serve immediately. Enjoy!
